Do it like yiayia: Tzatziki
The world-famous mediterrenean dip
One of the most famous (and important) appetizers in Greek cuisine.
It’s easy to make and can be eaten as a simple dip for bread, pita or french-fries, with souvlaki, or in gyros.

Ingredients
- Yogurt
- Garlic
- Cucumber
- Dill
- Olive oil
- A dash of white wine vinegar
- Salt
- Black pepper
We didn’t include precise measurements for the ingredients, as you can freely adjust proportions to taste.
Preparation
Firstly, peel the cucumber and grate it with a cheese grater, using the large blades. Put it in a bowl, add salt and a bit of white wine vinegar and set aside until the cucumber will release its liquid.
Combine the yogurt, garlic clove (or garlic powder) some white wine vinegar and keep adding olive oil until the yoghurt doesn't absorb it so readily any more.
Mix until it is combined and creamy.
Squeeze the cucumber with your hands to release any remaining liquid. Then add the cucumber to the yogurt mixture. Stir into the mixture and seasoning to taste. Refrigerate until needed.
